It is a simple, cheap way to play around with various OS, from my testing:

ChromeOS Flex - Everything works, This is what is currently loaded on it.
Linux Mint 21.1 - Everything works, This would be my suggestion of OS to use if you plan on sticking to one.
Batocera 36 - Runs perfectly without any issues. You are not going to emulate Switch games on this CPU, but plenty of older classics work.
LibreELEC - Works perfectly, MP4 files up to 4k play, HEVC files stutter at above 720p so I wouldn't recommend using it as a media device if you get mainly HEVC content.
Windows 10 - Has a graphics driver issue so everything works fine but there is a grey line across the screen at all times(Approximately 15mm).
Windows 7 - Works perfectly.
OpenMediaVault 6 - Works perfectly and sleeps external hard drives, which is a regular issue with Mini PC's like this.

Hey bud. Does it support UEFI boot? I'm looking for something to install Home Assistant on.

Let me confirm that for you tonight

***EDIT***

BIOS says it has UEFI 2.4; PI 1.3. I created a Live USB using your link, and it gets all the way to the Home Assistant command line when booting from the USB. I don't have much experience with Home Assistant so you can decide if this is helpful or not.
