Android Root, Unlock, Unbrick and Software Repairs

Yo, I don’t know if this is the right place but I just wants some clarity. My iPhone 11 got stolen out my locker at the gym and was turned off instantly in the bathroom. 12 hours later I get a notification that the phone has been turned on but no location can be found. Then 5 hours after that I get a notification that the phone has been taken off stolen mode (how?) then I get a notification that someone has logged into my iCloud. Then both the stolen devices (AirPods and iPhone ) disappeared off of device list. This was about 3 weeks ago. I’m the last week I got an email saying that the Apple ID associated with the device has changed.
How did they remove the stolen mode off the phone? I spoke to Apple attendant and Apprently they have software to do so. But major question. How did they get into my iCloud?

Hi there, I'll reply via PM as the answer is relatively long and somewhat technical :)
