Thanks Ebrahim. How do I remove forced encryption? I will add that this phone is brilliant even with Vodacom bloatware.
Im not sure how to do it with Odin but with TWRP you can use the console to deisbale forced encryption. I havent done this myself since I havent needed to flash anything in a while, the software doesnt get in the way of the hardware anymore with regards to stock android. You can check XDA thread for your device on specifics on how to do this.

Thanks. I'm happy with the phone as it is. If I could enable the second SIM slot by rooting/flashing the phone, I would probably look into that, but the issue remains i.e. that I only have one IMEI number as it's a N970F from Vodacom. The second SIM is/would be a nice to have for me, it's not a deal breaker.

Only having one IMEI doesn't necessarily mean the second SIM wont work. When I got my Moto Z Play from Vodacom I was in the same situation as you. On XDA there was a way to get the second SIM working with root and editing partitions with TWRP console. It worked for the most part but some people ended up wiping their IMEI and having a phone that couldn't cant use mobile data or make calls. On the other hand there were people who got the second SIM working regardless of not having 2 IMEI and they could make calls, use data etc.

I ended up not flashing or rooting anything since I had consolidated by voice and data contracts into 1 SIM.

Hey guys, lemme contribute! So I have an Huawei p30 lite. dual sim model by model number but the second sim is inactive. I messaged vodacom about this. Their firmware apparently locks the functionality. I will try rooting and custom romming it in the future to check if it reactivates the function, but I'm a bit hesitant as Huaweis are notorious for being a pain in the butt to unlock

Cellucity, which does do Vodacom contracts, do dual sim devices.
From the research I did, the Samsung Note10 N970F is not dual SIM at a hardware level. I stand to be corrected but I stopped digging when I read that.

I have a Dual Sim P10 on Vodacom contract from Cellucity.
Yes, it has two IMEI numbers on the back.
