Also, I believe A620 disables CPU overclocking, but what about changing the voltages and stuff, for undervolting? Do you know?

If you Google it, it looks like it might be possible.

But I think if you want that sort of functionality just get a B650, they're not that much pricier.

Edited, after talking with my friend some more

Don't need overclocking with 7000 series especially in this budget range. In fact it's better to limit some of the 7000X versions CPU power limit and undervolt, and you will get a cooler setup, with minimal loss of performance. Can be done on A620 boards as well.

From my experience Gigabyte have put the most work into their AM5 boards, especially their BIOS. This is borne out by a good Hardware Unboxed comparison a few months ago.
