My router pulls 2.5A and the CPE 0.5A. Can the 12V output on this device support this? So far, the best I can get is 2.5A combined which is not enough.

Yes, this would be strong enough to pull your router and CPE. Even our smaller units should pull your setup.

I've attached a picture of this unit's ports in the last image. But all units come with this "Y" splitter cable that splits into two with
the additional adapter points to make sure it fits/works with everybody's needs.

They aren't rated for charging a laptop, I was actually seeing if the plugs included fit a normal laptop charger, and they don't.
