So what happens if wifi is out or it loses wifi connection, does it auto-on, auto-off, stay at last setting? Is there a manual override? Normally I'd check a manufacturer's website etc. but can't seem to find anything so I assume these are rebranded something or others.

If wifi goes down, and you're running stock firmware, the last state will remain.
There are firmware hacks like Tasmota, that enables you to run it off your wifi network only.
