What are the benefits of playing the game with these items? Do you get special abilities like being able to kill quicker or from longer distances? How does the standard knife compare in-game vs a custom knife?

As Vivian said, skins give you no special abilities. It's all personal preference tbh, some people don't care about skins in the slightest but then some people want their game to look better, so they use skins.
