If I were to go custom water cooling

Well I'll put it in simple terms. My experience with water cooling is questionable at best. The only experience I have was with a simple all in one kit I used about 10 to 11 years ago. I had a gpu and cpu on that system and it worked pretty well but not really the good stuff you get these days.

I have an AIO on the cpu at present and it does the job. My reason for wanting to look at water is the RTX 2080 ti I have running in my system. I have an old water pump which still work but it is pretty noisy so a new one might be a better choice. I'll obviously need a waterblock which I found, but before I buy I want to see whether I can first source the more important stuff. This is where I'll need some guidance, advice and to find out whether there may be some of the stuff on the forum which people are parting away with.

So at present the water cooling will only be for my GPU. Any advice will be greatly appreciated.

Waiting to finalize my WC system. For the time being I have an AIO for the CPU, and for the GPU, using an EK Predator 240 with full water block. It helps immensely.

I think you are on the right track. Pretty simple really.
You would need the following:

1. Pump
2. Reservoir or feed to the pump
3. Radiator. Here I would suggest you take the TDP as a guide, but I think regardless of what you do a 240mm is a very good start.
4. Fans. I am also highlighting fans here, as I see a lot of people disregarding the need for proper fans which need to push through the heat out of the radiator.
I suggest you look at the H20 static pressure. 2mm+ is very good! Normal Air fans will be like 0.5mm. I saw a 20C difference between doing only Corsair SP fans vs Cooler Master Blade Masters (Non LED). But that is up to you.
5. Block. Here you have the 2080ti so you would have to probably import as waterblocks are the one thing that are not universal, at least not the recent GPU's. CPU blocks are somewhat universal, except the newer AMD chips.
I suggest you talk to @SphinxMods to assist you with a block. He sourced my 1080ti block for me.
6. You need some tubing. Seeing as you are a first time builder, I suggest you go for the flexible tubing option, rather than rigid tubing. If you need some assistance with rigid tubing I suggest you get some assistance from someone you trust, otherwise let me know what you have in mind/where you are situated and I will assist.
7. Fittings - Please note that you have different fittings for both flex tube and rigid tubing. For rigid I suggest you look at Rebeltech's kits from EK/Thermaltake. I also know that Titan Ice stocks some Alpha Cool and XSPC fittings.

8. Lastly, enjoy it and embrace it. You might need some patience, but everything has its place and installing everything there is quite simple. It all comes down to how complex you wish to make the loop.

NB: NOTE!! Please just make sure that you don't mix your materials. I.e. Stay away from aluminium radiators + Copper blocks on your CPU/GPU.
I would suggest you stay with Copper + Acetal.
