I would suggest an i5 with 16gb Ram + an SSD or preferably M.2 SSD, a laptop with these specs, should be able to handle her requirements as well as last a good few years

Any 8th gen and up, i5 with 16GB Ram should fine for this kind of work for the foreseeable future. Spss is quite basic.

Since she will be dealing with data science based applications, I'd highly recommend getting a 15.6" / laptop with a numpad to assist with data capturing.
